Moist and Delicious Carrot Cake

Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans.

In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.

In a separate bowl, whisk together the sugar, oil, and eggs.

Stir in the dry ingredients to the wet ingredients until just combined.

Fold in the carrots, pecans, and raisins.

Divide batter evenly between the prepared pans.

Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Cool cakes completely before frosting.

Frost with your favorite cream cheese frosting.
